Ingredients
For Glaze
- ¾ cup crushed tomatoes
- ¼ cup chipotle peppers in adobo sauce, pureed
- 2 tbsp light brown sugar
- 1 tbsp Dijon mustard
For Meatloaf
- 1 medium onion, diced
- 1 medium carrot, diced
- 2 garlic cloves, minced
- 1 cup applesauce
- 2 tbsp toasted pine nuts
- 1 tsp chopped fresh thyme
- 3 tbsp currants
- 1 egg, lightly beaten
- ¼ tsp cinnamon
- allspice (to taste)
- ½ cup fresh white bread crumbs
- salt
- pepper
- 1½ lbs ground turkey (dark meat suggested)
- canola oil to coat standard loaf pan
How-to
Make Glaze
- Combine all ingredients in a saucepan over medium heat. Stir until brown sugar dissolves, about 2-3 minutes
- Remove from heat & set aside
Mix Meatloaf & Bake
- Preheat oven to 400°
- Add everything but the ground turkey to a large bowl. Stir well to combine
- Add turkey and mix thoroughly
- Lightly oil a loaf pan and press meat mixture into pan
- Add the glaze and spread evenly
- Bake for about 50 minutes, or until juices begin to bubble around the sides of the loaf and the top has browned slightly
- Let rest 15-20 minutes before slicing & serving
