Just about every family has a cranberry bread recipe. This version is very moist with a nice variation of textures from crunchy nuts and chewy cranberries. It's a classic cranberry bread that's sure to please.
Serves 8-10
Ingredients
- 2 cups flour
- ½ tsp salt
- 1 tsp baking powder
- 1½ tsp baking soda
- 1 cup sugar
- 1 cup fresh cranberries, cut in thirds (or pulsed in food processor - don't over-process)
- ⅓ cup orange juice
- 2 tbsp canola oil
- 1 egg, beaten
- ½ cup chopped nuts
- boiling water
How-to
- Preheat oven to 350°
- Sift together flour, salt, baking powder, baking soda and sugar
- Add orange juice, canola oil and enough boiling water to make ¾ cup of liquid
- Add beaten egg as well as chopped nuts and cranberries and mix to combine
- Bake in greased loaf pan for 40-45 minutes or until a toothpick comes out clean when inserted into the bread
- Slice into 1" slices and enjoy
