Sides » Stewed Fava Beans
Laura Raposa of Boston Herald's Inside Track and Track Gals TV makes a flavorful dish of fava beans stewed with chorizo, tomatoes and spices. This simple side can be served as an accompaniment to meats and fish, or is delicious on its own. By the way, we're thrilled with the way she pronounces "chorizo!" Obrigado, Laura!
Serves 4 as a side dish
Ingredients
- ¼ lb chorizo, finely chopped
- ½ cup fresh fava beans, peeled (or frozen & defrosted)
- ¾ cup onions, chopped
- ½ cup stewed tomatoes (canned)
- 1 tbsp garlic, minced
- ¼ cup cilantro, chopped
- ½ cup white wine
- ½ cup chicken or vegetable stock
- chopped parsley for garnish (optional)

This side dish goes perfectly with Laura's Spicy Salt Cod Cakes!
