Stewed Fava Beans

Serves 4 as a side dish


  • ¼ lb chorizo, finely chopped
  • ½ cup fresh fava beans, peeled (or frozen & defrosted)
  • ¾ cup onions, chopped
  • ½ cup stewed tomatoes (canned)
  • 1 tbsp garlic, minced
  • ¼ cup cilantro, chopped
  • ½ cup white wine
  • ½ cup chicken or vegetable stock
  • chopped parsley for garnish (optional)


  1. In a sauté pan over medium heat, add chorizo and render the fat for 3 minutes
  2. Add the favas, onions, tomatoes, garlic and cilantro. Season with salt and pepper and sauté for 2 minutes
  3. Add the wine and stock and simmer for 5-7 minutes
  4. Garnish with parsley and serve hot
