Four simple ingredients make a beautiful Peanut Butter Truffle Cookie. Extra chunky peanut butter is the key for the texture you want that will perfectly match with mini chocolate chips. Easy, quick, delicious. In 20 minutes, including prep, mix, bake and cool, you've got cookies!
Makes about 2½ dozen cookies
Ingredients
- 1 cup extra chunky peanut butter
- 1 cup light brown sugar, firmly packed
- 1 tsp baking soda
- 1 large egg
- ½ cup mini chocolate chips
Special Equipment
- cooling rack
- cookie sheet
How-to
- Preheat oven to 350°
- In a bowl combine all ingredients except chocolate chips until well blended
- Gently fold in chocolate chips until just combined
- On ungreased baking sheet, place rounded spoonfuls (about 1 tsp), spaced about 2" apart (do not flatten)
- Bake 9 minutes or until cookies are puffed and golden (cookies will be very soft)
- Cool 5 minutes on baking sheet, then gently remove to a cooling rack and continue to cool completely before serving
