International » Nopales con Huevos (Cactus w/ Eggs)
If you have lived or spent time in Southern Texas, you know that breakfast tacos are as essential to living as oxygen and water. Tex-Mex cuisine queen Amanda Escamilla demonstrates how to clean new-growth cactus paddles (if you are lucky enough to find them fresh!), in which she blanches then sautés with onions and spices. Right before serving, Amanda scrambles eggs into the mixture, and portions into fresh, warm, homemade Flour Tortillas.
