Giorgio's Easy Meatballs

Parsley, basil, lots of garlic (8 cloves!), pungent Parmigiano-Reggiano cheese and ground beef get you started. Eggs, salt and pepper, beef stock, breadcrumbs - it's really that easy. When you hand roll them before baking, you can see and feel the rustic and homey texture. Bake for 20 minutes and they're done.     Delicious and simple! I baked them for 15 minutes instead of 20, and finished them in a huge pot of sauce. I'll be enjoying meatball sandwiches for the 7 days!
