Ingredients
- 20 oz Honeymoon Roast (also known as Sirloin Cap or Coulotte)
- salt to taste
- freshly ground black pepper to taste
- olive oil for coating the pan
- 2 tbsp butter
How-to
- Preheat oven to 350º
- Season both sides of roast well with salt and pepper
- Coat a hot skillet with olive oil and sear roast about 2 minutes on one side, adding about 2 tbsp butter during searing and basting with the oil and butter
- Flip it and roast in the oven at 350º for 15-17 minutes.
- Let rest 6-7 minutes before serving
- Roast is done when meat thermometer reaches 125-128º
