Bea's secret for how to get a vegetable into her children? She fooled them with this delicious squash pie. It's a family favorite and needs no garnish although a dollop of whipped cream and some pumpkin ice cream have been known to make their way to the plate.
Ingredients
- 6 tbsp sugar
- ½ tsp salt
- 1 tsp ginger
- 1½ cups milk
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 15-oz can squash
- 2 eggs
- pre-made pie crust, unbaked
How-to
- Preheat oven to 425º
- Mix squash, ginger, nutmeg, cinnamon, salt and sugar in a bowl
- In separate bowl slightly beat the eggs then mix in milk
- Add milk and eggs to squash mixture and combine
- Pour into unbaked pie crust and bake for 20 minutes
- Reduce oven temperature to 375º and bake an additional 50 minutes
- Test with round-edged knife at the edge of the pie. If the knife comes out clean, the pie is done
- Allow to cool slightly before serving
