The Grilled Cheese Grill, a Portland, Oregon food cart specializing in grilled cheese (oh, yeah), is the place to go for out-of-the-ordinary sandwiches. This is one tasty number with a whole roasted jalapeño pepper inside. For those of you who like a kick to your grilled cheese, this is the way to go.
Makes 1 sandwich
Ingredients
For Roasted Jalapeno Pepper
- 1 jalapeño pepper, seeded
- olive oil
- pepper
- salt
Other Ingredients
- 2 slices sourdough bread
- 1-2 tbsp cream cheese
- 2 slices Colby-Jack cheese
- tortilla chips
How-to
Roast Jalapeño Pepper
- Preheat oven to 350º
- Wearing disposable gloves, slice pepper lengthwise with a serrated knife
- Remove seeds and veins and slice pepper into thin strips (julienne)
- Place pepper on a baking sheet and toss with salt, pepper and olive oil
- Roast 20-30 minutes
Make Sandwich
- Spread cream cheese on one slice of bread
- Layer cheese slices on other slice of bread
- Add roasted jalapeños on one side
- Grill the sandwich open-faced until cheese has melted
- Remove from grill, add tortilla chips, slice in two and serve
