We salute these moist and buttery cookies with white chocolate chips, dried cherries, and blueberries. Hilary from Cow & Crumb puts a patriotic spin on these tasty treats by invoking the colors of the American flag: red, white, and blueberry! She even shows us a baking trick to get puffy tall cookies instead of flat ones, but you'll have to watch in order to learn!
Ingredients
Dry Ingredients
- 3 cups all-purpose flour
- 1¼ tsp baking soda
- ½ tsp kosher salt
- 1 cup dried blueberries
- 1 cup dried tart cherries
- 1 cup white chocolate chips
Wet Ingredients
- 2 sticks unsalted butter, cubed & chilled
- 1 cup light brown sugar
- ½ cup granulated sugar
- 1 large egg
- ¼ cup heavy cream
- 2 tsp vanilla extract
How-to
Preheat oven to 350°
Mix Dry Ingredients
1. Combine all dry ingredients, stir and set aside
Combine Ingredients
1. In a mixer fitted with the paddle attachment, cream together the cold butter and both sugars
2. Slowly add the egg, heavy cream, and vanilla extract. Mix on medium high speed until light and fluffy, about 2 minutes
3. Add dry ingredients all at once. Mix on lowest speed just until flour is incorporated, about 30 seconds
Portion & Bake
1. Scoop into golf ball sized mounds and bake for 12-15 minutes until golden on edges. Rotate the pan halfway through the baking time
