Tomato-Ginger Relish w/ Mint, Cilantro & Basil

Ingredients

  • 3 large tomatoes, peeled, seeded & diced
  • juice of 1 lime
  • 2 tbsp ginger, peeled & finely chopped
  • 1-2 tbsp red onion, chopped
  • 1 tbsp ponzu
  • ¼ cup cilantro, gently chopped
  • ¼ cup basil, gently chopped
  • ¼ cup mint, gently chopped
  • salt & white pepper for seasoning

How-to

  1. Peel, seed and chop tomatoes and place in large bowl
  2. With the back of a spoon, peel & finely chop ginger
  3. Add lime juice, red onion and ponzu
  4. Fold in fresh herbs, season with salt and white pepper
  5. For the best flavor, allow relish to sit overnight in the refrigerator
  6. Serve over fish, meat or Chef Paul's Curry-Rubbed Skirt Steak
