Cooking the Perfect Steak


  • beef steak (at least 1" thick)
  • salt
  • pepper
  • canola oil


  1. Preheat oven to 300° and set oven rack to the middle. Situate a wire rack on top of a sheet pan
  2. Season steak with salt & pepper. Set steak on the rack/sheet pan and place in the oven, cooking until the steak reaches an internal temperature of 95° -- about 25 minutes
  3. Coat a heavy-bottomed, non-stick skillet with oil, then heat on high until the oil starts smoking. Sear steak 2  - 2½ minutes per side
  4. Remove from pan to a wire rack (resting atop a sheet tray or something to catch the juices) then let rest for 5-10 minutes before serving
