Avocado Mousseline


  • 2 avocados
  • juice of ½ lime juice, strained
  • generous dollop of crème fraîche
  • salt to taste
  • pinch of sugar


  1. Remove avocado flesh and immediately toss with lime juice, then transfer to a food processor and blend until creamy, scraping down the sides of the food processor as necessary
  2. In a separate bowl, whisk crème fraîche to medium peaks
  3. With a spatula, add an equal part of the puréed avocado into the whisked crème fraîche
  4. Season with sea salt to taste and a pinch of sugar
  5. Fold ingredients together until mixture is well blended
  6. If not using immediately, keep refrigerated
