Sweet Potato Hash

Serves 2-4


  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • pinch of salt
  • pinch of black pepper
  • 3 sweet potatoes, peeled & diced (about 1")
  • ½ cup pure maple syrup
  • 2 tbsp Madras curry powder
  • 4 tbsp cold unsalted butter

Optional Garnish

  • chopped fresh herbs


  1. Heat olive oil In a large sauté pan over low heat, and add sliced onions. Season with salt and pepper. Stir once, then leave alone to caramelize for about 20 minutes without touching
  2. Meanwhile, blanch diced sweet potatoes in boiling water for 3½ minutes. Remove and set aside
  3. Add the curry powder and maple syrup to the onions and reduce by ¼, about 2 minutes
  4. Add cold butter and allow to melt. Fold in sweet potatoes, season as desired, and cook an 1-2 additional minutes over medium-high heat
  5. Garnish with fresh chopped herbs if desired and serve
