Smoked Peach-Bourbon Relish

Serves 4

Ingredients

  • 2 large, ripe (but firm) peaches, halved & pits removed
  • 2 tbsp firmly-packed brown sugar
  • 2 tbsp bourbon
  • 2 tbsp chopped parsley
  • ½ tbsp Dijon mustard
  • 1-2 tbsp minced garlic
  • ¼ tsp chili flakes
  • 2 tbsp cider vinegar
  • 1 small red onion, diced
  • 1½ tsp cumin seeds, toasted and ground

How-to

  1. Preheat BBQ smoker to 250º
  2. Place your peaches, flesh-side-up to smoke for ten minutes
  3. Remove and let cool to the touch, then slice into ¼" thick slices
  4. Place the smoked peaches and the rest of the ingredients in a bowl, toss together, season with kosher salt and freshly cracked black pepper to taste
