Simple Rosemary Mashed Potatoes

Serves 2-4


  • 3-4 medium red potatoes
  • 4 tsp butter, melted
  • ½ cup sour cream
  • ⅓ cup milk
  • 2 tsp rosemary leaves, finely chopped + sprigs for garnish
  • salt & pepper for seasoning

  1. Microwave potatoes on medium-high for 6 minutes
  2. Rough-chop potatoes into quarters. Place in large bowl with remaining ingredients
  3. With the back of a fork, smash potatoes against the sides of the bowl. Mix until combined, but still with some chunks for texture
  4. Garnish with sprigs of rosemary (optional)
