How to Cook Lentils

Serves about 8

Ingredients

Red Lentils (good for soups or a side dish)

  • 1 cup uncooked lentils (pick through them for stones and give them a good rinse before cooking)
  • salt & pepper to taste

Lentilles du Puy, Green or Black Lentils

  • 1 cup uncooked lentils (pick through them for stones and give them a good rinse before cooking)
  • salt (optional)
  • bay leaf (optional)

How-to

Cook Red Lentils

  1. In a large saucepan (the lentils will nearly double in volume) place the lentils and cover them with 2" of  water. Add a generous pinch of salt
  2. Bring to a simmer and cook until the lentils are tender, about 15-20 minutes. When they are completely cooked, red lentils will be a soft, orange puree

Cook Lentilles du Puy, Green or Black Lentils

  1. In a large saucepan (the lentils will nearly double in volume) place the lentils and cover them with 2" of  water. Add a generous pinch of salt
  2. Cover, bring to a simmer and cook until the lentils are tender, about 30-45 minutes
  3. Drain and serve as a side or in a salad (Lentil Salad 3 Ways)
