Cauliflotatoes

Serves 4

Ingredients

  • 2-3 potatoes, skins on, chopped
  • ½ head cauliflower, cored & chopped
  • 1 medium onion, diced
  • ¼ cup sour cream
  • 3 tbsp milk
  • 1 tbsp butter
  • salt & pepper to taste
  • ¼ cup scallions, whites & greens, chopped

How-to

  1. Add onion, potatoes and cauliflower to large pot of boiling water and cook until fork tender, 15-20 minutes
  2. Strain water and to the potatoes add butter, sour cream, milk, salt and pepper
  3. Mash until desired consistency is reached, then add scallions and with a spoon, stir to incorporate (do not mash in the scallions)
