Grilled Shrimp & Asparagus w/ Roasted Red Peppers


  • 3 shrimp, cleaned, de-veined & tails removed
  • sea salt to taste while grilling
  • olive oil for drizzling while grilling
  • whole basil leaves


  • drizzle of olive oil
  • red pepper flakes to taste
  • sea salt to taste


  • 8 asparagus spears, white & green
  • olive oil for drizzling while grilling
  • sea salt to taste while grilling


Marinate the Shrimp

  1. In a bowl, add shrimp, drizzle with olive oil, add sea salt and red pepper flakes to taste
  2. Allow shrimp to marinate for a few minutes

Grill the Asparagus

  1. Trim and peel about 2" from the ends of the asparagus
  2. Heat grill on high and lay asparagus right on the hot grill.  Drizzle with olive oil
  3. Turn asparagus while grilling to get a nice char and season with salt and drizzle again with olive oil while grilling to get flavor on all sides
  4. Asparagus are done when they are tender and bend easily

Grill the Shrimp

  1. When the asparagus are almost done, remove shrimp from marinade and place on the hot grill
  2. Close the grill cover for 1-2 minutes (this creates a type of oven to cook both the inside and outside of the shrimp)
  3. Season with salt to taste and a drizzle of olive oil. Flip shrimp over and place a whole basil leaf on each shrimp. Drizzle again with olive oil
  4. Close the grill lid and cook for 30 seconds more

Plate & Serve

  1. Lay asparagus spears on a plate, alternating white and green
  2. Place shrimp to the side of the asparagus
  3. Pile on some Fire-Roasted Red Peppers with Garlic & Basil and serve!
