Strawberry Gazpacho


  • 3 qts fresh strawberries, hulled
  • 1½ cups orange juice
  • ¼ cup lime juice
  • 2 tbsp rice vinegar
  • 1 cup water
  • 2 tsp kosher salt
  • 1 tsp ground black pepper
  • 3 tbsp honey
  • ¼ cup extra virgin olive oil
  • Tabasco sauce to taste

Garnish (add as much or as little as you like)

  • diced strawberries
  • diced cucumber
  • diced red onion
  • toasted almonds
  • fresh chopped cilantro
  • olive oil
  • ground black pepper

Special Equipment

  • immersion blender


  1. Add strawberries, orange juice, lime juice, rice vinegar, water, salt, pepper, olive oil and Tabasco sauce to a pot.  Using an immersion blender, purée to a creamy texture
  2. Ladle into a bowl (or, as Chef Peter demonstrates, into cute take-out boxes), spoon garnish choices in the center and serve
