Aunt Angie's Shrimp Casserole

Serves 10 appetizer portions


  • 2 lbs shrimp, peeled & deveined
  • 1½ sticks butter
  • 1 onion, diced
  • 2 rolls Ritz crackers
  • salt, pepper & garlic salt to taste


  1. Preheat oven to 425º
  2. Peel and devein the shrimp
  3. Dice 12 of the shrimp and set aside. Cut the rest of shrimp into 2 pieces
  4. Melt the butter in a saucepan over medium heat
  5. Add onions, crackers, the 12 diced shrimp and seasonings to the melted butter (the "dressing"), and stir until all ingredients are well coated
  6. Spread half of “the dressing” on the bottom of a 9” x 13” casserole dish
  7. Layer remaining shrimp across dressing
  8. Spread remaining dressing on top of the shrimp
  9. Bake for 20 minutes at 425º, lower oven heat to 350º and bake an additional 15 minutes and serve
