Rick's Kickin' Turkey Chili

Ingredients

  • 1 lb ground turkey
  • 2 red peppers, chopped
  • 2 medium onions, chopped
  • 2 hot green peppers, split, seeded & chopped
  • 2 jalapeno peppers, split, seeded & chopped
  • 1 whole head of garlic (more or less to taste), chopped
  • 1 pkg chili mix
  • ½ tsp basil
  • ¼ - ½ tsp oregano
  • 1 tsp seasoned salt
  • 2 16-oz cans dark & red kidney beans, drained
  • 1 12-oz can diced tomatoes with jalapenos
  • 1 12-oz can diced tomatoes with green chilies
  • 1 12-oz can tomato sauce
  • 1 12-oz can chicken broth
  • 6-8 tbsp brown sugar
  • cayenne pepper to taste
  • tortilla chips

How-to

  1. Chop all vegetables to the desired chunkiness
  2. Add to stock pot with about 6 tbsp olive oil
  3. On high heat, start cooking the vegetables for 2-3 minutes
  4. Add spices and turkey and mix well
  5. Reduce heat and simmer for 10-15 minutes, stirring
  6. Add 2 cans dark & red kidney beans, drained
  7. Add 1 can diced tomatoes with jalapenos
  8. Add 1 small can diced tomatoes with green chilies
  9. Add 1 can tomato sauce, 1 can chicken broth, 6-8 tbsp brown sugar and bring to a boil. Then lower heat, cover and simmer 40-60 min, stirring occasionally
  10. Serve with rice
