Curry-Rubbed Skirt Steak
Ingredients
- ¼ cup curry powder
- 1 tbsp cayenne pepper
- ¼ cup ground coriander
- ¼ cup cumin
- 1 lb skirt steak
- salt for seasoning
- white pepper for seasoning
- ½ cup canola oil
- 2 tbsp butter
How-to
- Blend first 4 spices and sprinkle spice blend on both sides of the steak
- Let the steak marinate in the refrigerator for 1 hour
- Season the steak with salt and white pepper
- Heat ½ cup oil in pan over high heat
- Add steak to sear. After about 1 minute, add butter into pan. Allow it to cook 1 more minute, while basting the top of meat with fat (constantly spooning liquid over top)
- Flip to sear other side for another 2 minutes, continuing to baste
- Remove meat from pan to paper towel-lined plate and allow to rest a few minutes before slicing
- To serve, slice against grain and serve as is or topped with Tomato-Ginger Relish w/ Mint, Cilantro & Basil
