S'mores Cupcakes

Makes one dozen

Ingredients

For Cupcakes

  • ¾ cup sugar
  • ½ cup + 6 tbsp all-purpose flour
  • ⅓ cup cocoa powder
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 large egg
  • ½ cup milk
  • 4 tbsp butter, melted
  • 1 tsp vanilla
  • ½ cup boiling water
  • 1 (1.5 oz) milk chocolate bar, chopped

For Assembly

  • 12 marshmallows, halved
  • 4 graham crackers, broken into 12 pieces
  • 12 mini milk chocolate bars
  • 1 graham cracker, crumbled

Equipment

  • standard 12-count muffin tin
  • nonstick cooking spray
  • 12 cupcake liners

How-to

Make & Bake Cupcakes

  1. Line muffin tin with cupcake liners and spray the whole tin with nonstick spray
  2. In a large bowl combine sugar, flour, cocoa powder, baking powder, baking soda, and salt
  3. In a separate bowl whisk eggs, milk, vanilla, and melted butter. Add the wet ingredient to the dry and combine
  4. Once combined, stir in the boiling water, mix until fully incorporated and fold in chopped chocolate 
  5. Portion into pan, filling ¾ full. Bake 12 minutes
  6. After 12 minutes, take the pan out of the oven. Insert ½ of a marshmallow into the center of each partially baked cupcake
  7. Bake an additional 12 minutes

Decorate

  1. Upon removing the cupcakes from the oven, you'll notice that there is a cavity where the ½ marshmallow was. Put the remaining ½ marshmallow into this hole
  2. Insert a piece of graham cracker and chocolate into the marshmallow and top with graham cracker crumbs
