Oatmeal Pecan Maple Thins

Ingredients

Yield: 24 Cookies

  • 4 oz maple syrup
  • ½ cup packed light brown sugar
  • 1 large egg
  • 8 oz unsalted butter, melted
  • 1 cup all-purpose flour
  • 1½ cup quick oats
  • 1 tsp salt
  • ¼ tsp baking soda
  • 1 cup pecans, chopped fine

How-to

  1. Preheat oven to 350º
  2. Beat maple syrup, sugar and egg in mixer on medium speed until well blended
  3. Add in melted butter and beat until just incorporated
  4. Add in dry ingredients and chopped pecans
  5. Scoop onto lined sheet pans and bake 18-20 minutes in 350º oven
