Noodle Pudding

Ingredients

  • 1 container cottage cheese (16 oz)
  • 1 container sour cream (16 oz)
  • 8 oz cream cheese
  • 4 beaten eggs
  • ½ cup sugar
  • vanilla, salt, cinnamon to taste
  • 2 cup raisins (blonde or dark)
  • 1 lb broad egg noodles
  • 1 cup slivered almonds
  • 1 jar apricot jam
  • 2 tbsp butter

How-to

  1. Preheat oven to 350º
  2. Coat large round or rectangular pan with butter
  3. Cook noodles according to package directions, strain and set aside
  4. Break eggs into a large bowl and whisk
  5. Mix dairy products in with the whisked eggs
  6. Genty fold in cooked noodles
  7. Mix in vanilla, sugar & cinnamon
  8. Fold in raisins
  9. In a separate pan, heat apricot jam for 1 minute until the jam melts
  10. Pour jam over noodle mixture and spread evently with a pastry brush
  11. Sprinkle slivered almonds on top, add a dusting of cinnamon, dot with small pieces of butter, cover and bake for 1 hour.  Knife inserted should come out clean when done
