Maple Whole Grain Quick Bread

Makes 1 Loaf

Ingredients

For Bread

  • 1⅓ cups white whole wheat flour
  • 1⅓ cups oat flour
  • ½ tsp kosher salt
  • 1½ tsp baking powder
  • 1½ cups skim milk
  • 1 egg
  • ⅔ cup pure maple syrup
  • 2 tbsp vegetable oil
  • 1 cup raisins, chopped (optional)

Equipment

  • 9" x 5" loaf pan
  • nonstick cooking spray

How-to

  1. Preheat oven to 350º
  2. Whisk together dry ingredients in a large bowl
  3. In a separate bowl, mix together wet ingredients
  4. Add raisins to the dry ingredients (if using), then make a well in the middle and slowly pour in the combined wet ingredients, while whisking. Don't worry about over-mixing (the oat flour doesn't contain much gluten, so the batter cannot be overmixed)
  5. Coat 9" x 5" loaf pan with nonstick cooking spray. Spread batter evenly in pan. Bake 60-70 minutes, or until a toothpick can be inserted & removed clean
  6. Allow to cool at least 10 minutes before removing from pan. Transfer to a cooling rack and cool an additional hour before slicing
  7. Slice and enjoy! Toast and serve with butter, or try Maria's Maple Cream Cheese Spread
