Grapefruit Granita

Makes 5 Cups

Ingredients

For Mint Simple Syrup

  • 1 cup sugar
  • 1 cup water
  • handful of mint leaves

For Granita

  • 1 cup Mint Simple Syrup (see above)
  • 4 cups grapefruit juice
  • tequila for serving (optional)

How-to

Make Mint Simple Syrup

  1. Bring sugar & water together in a small pot. Bring to boil, then add mint leaves and remove from heat
  2. Let steep at room temperature, 30 minutes
  3. Strain mint leaves and cool completely

Mix & Freeze

  1. Whisk together 1 cup mint simple syrup with 4 cups grapefruit juice
  2. Pour into a shallow pan and freeze for 1-3 hours, until firm, fluffing with a fork every 30 minutes

Serving Suggestions

  1. Chip off a chunk of the granita (it will freeze fairly solid) and pulse in a food processor a few times to achieve a shaved ice texture
  2. Scoop into a bowl and serve immediately
  3. If desired, drizzle tequila over the granita tableside
