Pork Sausage Patties

Makes about 20 patties

Ingredients

  • 2 cups chopped onions
  • 2 tbsp vegetable oil
  • 2 tbsp milk
  • ½ cup panko bread crumbs
  • 2 lb ground pork (avoid lean meat)
  • 2 large egg yolks
  • 2 tbsp salt
  • 1 tsp white pepper
  • ⅛ tsp ground cloves
  • ¼ tsp cinnamon
  • ¼ tsp freshly grated nutmeg
  • ¼ tsp cayenne
  • 1 tsp chopped thyme leaves
  • 1 tsp chopped sage

How-to

  1. Heat 2 tbsp vegetable oil in a small heavy skillet over medium-low, stirring occasionally until softened and slightly browned, about 10 minutes. Cool completely
  2. In a large bowl combine bread crumbs and milk and let stand until crumbs absorb milk
  3. Add onions and remaining ingredients to crumb mixture and mix until well blended
  4. Form into 3" patties (about ½" thick) with dampened hands. If eating/cooking immediately, heat 1 tsp vegetable oil over medium-high heat. Cook patties 2 minutes per side. If freezing, place into plastic sandwich bags and freeze for up to 30 days
