Mozzarella & Prosciutto-Wrapped Asparagus

Serves 4


  • 8 asparagus spears
  • 8 thin slices prosciutto
  • 4 slices fresh mozzarella cheese (2 oz each)
  • salt & black pepper
  • 1 tbsp olive oil
  • 1-2 tbsp water


  1. Bring a medium pot of water to boil
  2. Boil asparagus spears 1½ minutes
  3. Drain and transfer to a boil of ice water immediately to "shock" the spears and stop the cooking
  4. Remove from ice water, pat asparagus dry, and set aside
  5. Lay 2 pieces of prosciutto out flat, side-by-side
  6. Place one slice of fresh mozzarella in the middle of the prosciutto, and lightly press flat with your finger tips. Season with salt and pepper
  7. Add 2 asparagus spears and roll, wrapping prosciutto around the spears and cheese in a tiht bundle. Repeat with remaining ingredients
  8. Heat 1 tbsp olive oil in a sauté pan over medium
  9. Add bundles, cheese-side-down. Sear about 3 minutes. Season with pepper if desired
  10. Flip and add 1-2 tbsp water to the pan around the bundles. This will start to bubble and create steam. Allow to cook 10 seconds, before removing to a plate to serve
