Chicken, Broccoli & Cheese Quesadillas
Ingredients
- flour tortillas
- shredded cheese
- roasted or grilled chicken
- steamed broccoli florets
- 1 tbsp butter (per 2 quesadillas)
How-to
- Mound cheese, then chicken then broccoli on one flour torilla
- Top with a little more cheese (this will help the top tortilla to adhere when grilling) and add second tortilla
- Preheat griddle to 350º or a pan over medium-high heat
- Melt 1 tbsp butter and grill quesadillas 2-3 minutes per side, or until cheese is melted
- Remove from heat, let rest 30 seconds, then slice and serve
