Chicken, Broccoli & Cheese Quesadillas


  • flour tortillas
  • shredded cheese
  • roasted or grilled chicken
  • steamed broccoli florets
  • 1 tbsp butter (per 2 quesadillas)


  1. Mound cheese, then chicken then broccoli on one flour torilla
  2. Top with a little more cheese (this will help the top tortilla to adhere when grilling) and add second tortilla
  3. Preheat griddle to 350º or a pan over medium-high heat
  4. Melt 1 tbsp butter and grill quesadillas 2-3 minutes per side, or until cheese is melted
  5. Remove from heat, let rest 30 seconds, then slice and serve
